Olive sheets with sautéed Jerusalem artichokes

12 Olive sheets 
140 g of Jerusalem artichoke 
1 clove of garlic 
12 flakes of Grana Padano 
100 g of vegetable broth 
extra virgin olive oil. salt 

To prepare the sfolie with sautéed and raspadura Jerusalem artichokes, peel the Jerusalem artichoke and cut it into cubes of the same size so that it cooks evenly. Put a drizzle of oil and the garlic clove in a pan and let it brown for a few minutes. Then add the diced Jerusalem artichoke and let it flavor then add the vegetable broth and cook for about 20 minutes over medium heat. Add salt and pepper to taste and, when cooked, add chopped parsley. Cut some Grana flakes and arrange them on each sheet then put a teaspoon of sautéed Jerusalem artichokes on each flake and a pinch of chopped parsley to garnish.
